A Philly classic of sorts. Lots of Star Trak cameos in the video, from a peasy-headed Pharrell, to “Funeral” era Clipse. This is back when Pusha still went by “Terrar” and had just got the fresh braids. Chad and Pharrell were always good about putting their artists on and in everything they could. I can’t believe it’s been 10 years since this shit came out, they used to play it on Urban X-Pressions all the time…..

New Apartment

Cory just moved to a new apartment yesterday. Now he lives right in the middle of the big city of Osu Kannon, Nagoya. Everything is just accross the street; gym, shopping mall, food bazaar, etc.

I am SO jealous! :-P

Lets Harvest the Organs of Death Row Inmates

Let’s face it: there is always going to be a disparity between human ethics and morals on the subject of capital punishment.

However, while capital punishment still exists I see this idea being a very worthwhile pursuit. Hopefully you watched the video and didn’t jump to conclusions based on the title. Of the many comments on this video, time and time again I saw the counter argument:

“So, if your father is in the wrong place at the wrong time and gets convicted of a capitol crime you’re okay with his organs being harvested and sold.”

But if those who state this had actually watched the video without their own predispostion then they would have seen that they are arguing the case for allowing inmates the ability to donate their organs. It’s not a blanket proposition, but one of choice. If they WANT to donate their organs, why not?

Preliminary thoughts on capital punishment: What would I think about capital punishment if it were my own family and friends?

Personally, I’m not sure what I think about capital punishment as I have not given it much thought. Once I’ve done my research, I’ll update the idea with an entry of it’s own.

Piano for Friday: The Light Eternal

I love Requiem for a Dream. I hate Requiem for a Dream. But the Lux Aeterna theme is amazing, whatever you think of the film.

While you can’t really do justice to the piece on a single instrument (especially given the mood you lose going from strings to piano), this guy gives it a good shot. This is from the youtube user Raftaman92. The piano’s bass reverberates in a funny way, but it seems like that helps it to recapture some of the lost intensity of the original. And if you aren’t familiar, the original is rather intense. I love it. It drags you in and commands your attention until several moments after the piece has ended. Give it a listen.

Homemade Gluten Free Bagels

Gluten Free bagels that are naturally dairy-free and can easily be made egg-free! :-)

This is one of those things that most people probably don’t think they will ever have to make in their lives, and why would you?  Bagels are are very easy to obtain.  Well, unless you are gluten-free or suffer from food allergies.

Joan’s Great Bakes makes a really good gluten-free bagel, but they are expensive because of shipping costs (if you live in the mountain time zone like I do, shipping is about $45).  A local Albuquerque store used to carry them but they were $14.99 for a 5-pack of bagels.  That can be a hard price to swallow, regardless of your financial situation.  We would buy them as a special treat but they were never a staple simply because of the price.

A few weeks ago, Sam’s Friday Fun Snack at school was making “Bear Bagels.”  The kiddos were using 2 bagels of different sizes, a large bagel and a mini bagel, to assemble a bear face.  I got the recipe with only a 3 day notice, so I did not have time to order any more bagels from Joan’s Great Bakes without paying an overnight shipping charge, and even I have to draw the line somewhere! :-D   So, I had 2 whole days to figure out how to make homemade GF bagels and GF “Nilla” wafers!

Here is the recipe for Bear Bagels (in case you are interested):

I lucked out and happened to have one Joan’s Great Bakes bagel left in my freezer (from who knows when), but I was desperate, so I used it anyway!  I don’t know if you have ever had one, but they are not all that big. They fall somewhere between a gluten-containing “mini” bagel and a gluten-containing “regular” bagel (but no where near the size of a gluten-containing “large” bagel). Which is totally fine by me, because I am very big on “true” portion sizes in our house. It only poses a problem when making said “Bear Bagels!” ;-) I thought about using a cookie cutter to cut out a smaller sized bagel from one of the halves, but that was clearly not going to work.  I tried making a batch of bagels from a recipe I found online, but they tasted horrible and looked even worse, so they promptly went into the trash.  I did learn one thing from that experiment though, how to shape a bagel the easy way (I’ll show you that in a minute)!

After my first batch of homemade bagels were a bust, I realized I had to admit defeat and figure something else out to replace the mini bagel, I just didn’t have enough time.  You have no idea how difficult giving up was for me (even if it was only temporary).  Right or wrong, I still feel very guilty for having passed on the celiac gene to my son.  Because of this, I am admittedly OCD about making Sam’s “public” GF foods look the same as his friends, although I have never actually hit the mark for one reason or another!

Anyway, I had made some Better Batter biscuits for dinner that evening and had a few left over, so I went with a mini biscuit “bagel” instead for Sam to use as the bear nose.  Needing to make the biscuit smaller than the Joan’s Great Bakes Bagel, meant I also had to cut down the GF “Nilla” Wafers I had made.  Here is the bear we ultimately ended up with:

It worked, but had much room for improvement! ;-)

I have since been researching different homemade bagel recipes to try and I made a second attempt yesterday using this recipe from the Baking Bites website (with gluten-free substitutions of course). Baking Bites is a great website, and once one feels comfortable making gluten-free substitutions, an entire world of possibilities opens up!  Check out Nicole’s recipe for homemade Girl Scout Samoas (always and forever Caramel Delites in my book :-) ).  I cannot wait to experiment with that recipe!

Homemade Gluten-Free Bagels

(Nicole Weston’s original recipe is in black, my additions/changes are in red).

1 Tbs. Active Dried Yeast (I used Red Star Yeast which is gluten-free)

1 Tbs. Sugar

1 3/4 cup Warm Water (110° – 115° F. is the optimal temperature to activate the yeast, according to the Red Star website.  Although, I have also read that 100° – 110° F. is the optimal range, so I guess anywhere from 100° – 115° F. is the area to shoot for. ;-)   If the water is too hot, you will kill the yeast.  I like to use a thermometer to make sure the water is “in the proper zone”).

4 cups Bread Flour (for this recipe I just used Better Batter Gluten Free Flour.  I am trying to figure out a good gluten-free substitute for bread flour to see if that changes the outcome of the final product, I will keep you posted).

1 Tbs. Salt

1 Egg for Egg Wash (not sure if this is necessary, but I have always added 1 Tbs. of water to each egg in my egg wash. If you cannot have egg, this step can just be omitted.)

  • First, you want to “proof” your yeast.  I ALWAYS proof my yeast (to make sure the yeast is “active”) in my gluten-free baked goods, because not only do I want to save time and frustration from a potential flop, but gluten-free ingredients are too expensive to risk throwing it all away because of something as inexpensive as yeast!  So:
  • In a bowl, add the yeast, sugar and warm water (100° – 115° F).  Stir to incorporate the ingredients, then set the yeast aside to do it’s work, about 10 minutes. (Click here for more information on the different types of yeast and the best way to use them for optimal results.  If you are interested, see below for a video I found on YouTube on “How to proof yeast”).
  • Meanwhile, in a large bowl (I used the bowl of my stand mixer) add the flour and salt.
  • Once the yeast has “proofed,” add it to the flour/salt mixture.
  • Mix dough thoroughly until it comes together in a large ball, pulling away from the sides of the bowl.  Add an additional tablespoon of flour or water, if needed.  If kneading by hand, turn dough out onto a lightly floured surface and knead until very smooth and elastic, about 10 minutes.  If using a stand mixer, knead dough with the dough hook until elastic, about 8 minutes on a low speed (this is what I did).  Place dough in a lightly greased bowl, cover with plastic wrap and let rise for 1 hour, or until doubled in size.  (Make sure you put the dough in a warm place. click here for some rising tips from baking911.com, I reference this website all the time, because I have zero formal training in baking! :-D I highly recommend bookmarking it for future use).
  • Bring a large pot of water to a gentle boil (I used a roasting pan over two burners), and preheat the oven to 400° F.
  • When dough has risen, turn the dough out onto a very lightly floured surface and divide into 12 equal pieces (first quarters, then thirds).  Shape each piece into a tight ball as illustrated below (click here to see Nicole’s illustrations), pinching the corners together at the bottom of the piece of dough (I didn’t really do this step as written, I just rolled out a ball).  When all the balls are shaped, let the dough rest for 30 minutes covered with a clean dish towel.
  • Once dough balls have rested, the bagel shape can be formed.  Using your fingers, poke a hole through the center of each dough ball (I cheated and used my apple corer to make the hole).  Stretch out the dough into a ring with your fingers and be sure to make the hole a little larger than you want the finished bagel to have, as it will shrink slightly while the bagel is expanding during the baking process.  Let bagels rest for about 10 minutes.
  • Working four at a time (I put all of mine in at the same time since I was using a pan with a large surface area), drop the bagels carefully into the boiling water.  Boil for 2 minutes on the first side, then flip and boil for an additional minute (I used chop sticks for this).  Using a slotted spoon or strainer, transfer bagels to a clean towel to drain for a moment, then place on a parchment-lined baking sheet.  Repeat process with remaining bagels.
  • Brush boiled bagels with lightly beaten egg (I added 1 tbs. of water to my beaten egg) (a pastry or bbq brush is a good tool for this) and bake for 20-24 minutes, until golden brown.
  • Cool completely on a wire rack.

I mixed all the ingredients using my dough hook attachment, on low for 8 minutes.

This is what the dough looked like after rising for 1 hour.  It does not look exactly like a risen gluten-dough.

Instead of using the method in the Baking Bites recipe, I just rolled the dough pieces around on the counter (to make it smooth).

I then stretched the hole out a little bit.

Tip: Keep your bagels covered with a damp cloth while you are shaping your bagels, so the dough is less likely to dry out and crack.

Some of my bagels were lumpy and bumpy, so using warm water, I tried to smooth them out before adding them to the boiling water.

Fresh from the oven, GF bagels: Crunchy on the outside with a chewy inside, just like “real” bagels!  Without cream cheese, there is a slight “sourdough” taste to these.

This is one of the bagels the day after I made them.

I stored them unsliced, in an airtight container. They did need to be softened up a bit, so before slicing, I nuked them in the microwave for 20 seconds and it was as if they were fresh!

We even made some Gluten-Free “Bagel Bites,” yummy!

Mike and I tried to cost these out, using the Better Batter Gluten-Free Flour. After shipping, a 25-lb. bag of Better Batter is $86.00. There is roughly 3 cups in 1-lb. of Better Better, so a 25-lb bag is roughly 75 cups of flour. That comes to roughly $1.15/cup. This recipe uses 4 cups of flour, so that’s about $4.60. The other ingredients are too inexpensive to worry about, but for argument’s sake, let’s round it up to $5.00.

$5.00 for 10 homemade GF bagels versus roughly $30.00 for 10 store-bought GF bagels.

Now that my friends, is some food for thought! ;-)

Cool Poweriser Video

This is the Poweriser show team in Europe, they really good. This video will show you some possibilities of what you can do with Powerisers. You should definitely not try anything these guys are doing without the proper safety gear and practice but it is definitely cool what you can do with Powerisers.

[YouTube/MU] Cool Soul CNY Spree

As mentioned in one of my earlier entries, the Cool Soul team has indeed delivered all of their videos as promised, with one per day. Perhaps I was kind of expecting too much from it, at least length wise per video, since I thought they were really in the mood of delivering big, huge and nice presents to all the gamers during this festive season. Turns out that each video is pretty much a research report of sorts, like they have done a couple of times previously, with KOF2003.

Anyhow, each video has an entry on the team’s official blog, and over there you are able to see a MegaUpload link should you wish to download a copy to keep (for whatever reasons). Each video also has a little teaser for the next release, which is more meaningful if you were looking at it day by day. Oh well. Anyway, the YouTube videos are uploaded by me. Thought I’d do something different for a change, instead of always waiting for someone else to put it up. =)

KOV: Seven Spirits. The longest video of the entire batch, but it’s also partly due to how long one combo really takes. Though I didn’t play the game much, it is nice to see some of the links that I never seen nor thought of. There’s really a huge difference if you know how to play the game. Haha. New Late Of The Pier - Best In The Class

The video for Best In The Class, the latest release from popular seaside proggers Late Of The Pier, has ‘surfaced’ online. The press release calls it a ‘kaleidoscopic maelstrom’, which basically means that everything spins around a lot.

Here are the key points.

» The whole thing resembles a sort of salvia-induced, dribbling stumble through Topshop

» There are some probably-illegal subliminal frames of weird men in it

» The video features an ethereal rave granny segment (she belongs to Sam Potter), which coincides with the best bit of the song

» The last 30 seconds is just a load of girls in bikinis throwing powder paint around

Interesting ending. The tune itself is all a bit ‘album track’ but it should appease those LOTP fans who were freaked out by Blueberry’s new direction.

There’s a remix of Best In The Class floating around, purporting to be by Soulwax. If it is them, they’ve not so much phoned it in as completely forgotten to call and then texted the wrong number a week later.

Windows Phone 7 Series, otro iPhone killer?

Pues los 3 grandes (Microsoft, Apple y Google) ya andan metidos casi en los mismos “bussines”, y ahora Microsoft saco la nueva version de su sistema operativo para celulares, muy muy pero muy parecido al que utiliza el Zune HD (que no ha terminado de levantar). La verdad es un producto bastante bueno, creo que esta hasta mejor que el Android de Google. Ha llegado ahora si el iPhone killer? La verdad no se, de lo que estoy seguro es que Apple no se dormida. Si desde que salio el iPhone alla por el 2007, se habia especulado de que proximamente llegaria el iPhone killer y la verdad no ha pasado, pero tanto Google con el Nexus one, y ahora Microsoft con este nuevo SO ahora si podria haberle llegado al iPhone competencia real, pues el Palm Pre (y otros tantos) nomas no convencio.

Es ahora cuando Apple debe darle al iPhone una renovada a la apariencia externa (pues ya lleva 3 años luciendo practicamente igual) y al OS que al final es lo que ha hecho al iPhone ser lo que es, nadie hasta ahora, le gana en usabilidad, pero si se agradeceria bastante una home screen que te muestre de un solo golpe, no solo la hora y fecha, tambien la temperatura, resumenes de llamadas perdidas, correos sin leer, actualizaciones en Facebook, Twitter, etc, para que no tengas que andar entre los diferentes escritorios del iPhone viendo si tienes actualizaciones y definitivamente le hace falta el multitasking. Yo confio en que a mediados de año estemos viendo un iPhone completamente nuevo, pues ahora si hay dos grandes rivales.

Happy Birthday, Paige!

Paige turned seven today and the last few days were all about celebrating her! 

It started off on Thursday with a birthday party with her best friends, hot dogs for dinner, and then a viewing of Monsters vs Aliens afterwards. 

Friday we had dinner at The Old Spaghetti Factory where, along with basking in mizithra, we all shared what we appreciated about her. 

Today, was shopping with Grandma Nene, being treated to a peppermint hot cocoa by big sis, visiting with Papa Bob and Grandma Bobbie, and eating a dinner built around Paigey’s favorite mashed potatoes.  (It didn’t matter what we ate, just as long as there were mashed potatoes.) 

Finally, in keeping with family tradition, Paige gave mom a present:  A pound of Sleepy Monk coffee!

You’re a gift from God to us, Paige!  Our lives are better because of you!

How Does It Look?

The last time I posted I discussed my fav position and the how my training was geared towards getting better at this movement. This has paid dividends to the effing degree. I have decided I would post some quick pix of me and another girl from our box for approval and proof that lifting heavy weights mixed with CrossFit makes for a solid platform for reverse cowgirl.

It all seems so clear…find a goal and go out and train for it. My goal was to get stronger so I could master my movement but I think I am going to take a cue from the girls at CrossFit Practice and have decided that I want to start training for a figure show. I was looking at the girls on Josh Bunch’s site and those girls are hot. Jealous…seriously.

[NEWS] 100207 f(x) at the '7th Annual Best Movie Awards' congratulatory stage.

Idol Group f(x) performed at the congratulatory stage for the ‘7th annual Max Movie Best Movie Award’.

On the 9th (Tuesday) at 7PM at the Coex Auditorium, f(x) will be performing at the ‘7th annual Best Movie Award Ceremony’ festival.

In 2009, f(x) debuted with the song ‘LaChaTA’, and made ‘Chocolate Love’ and ‘Chu’ a hit song which led them to be named the best new idols. It’s believed that f(x) will raise the atmosphere by performing at the congratulatory stage.

Girl Fights

The story of Phoebe Prince has shocked our community and lead to a lot of discussion about girls bullying one another, but it’s not the only case of girls bullying. There’s recently been a trend of Youtube videos of girls getting into fistfights.

This fight, uploaded today, shows two girls fighting while the person filming makes comments, puts background music, and another man watches from less than 5 feet away, and does nothing.

This one, also uploaded today, and edited with transitions and music, features sixth graders:

this news article talks about two fourteen-year-old girls who got in a fight over a boy in Lowell, MA. Fortunately, officials are doing something about this case. The girl who instigated the fight was “arrested and charged with assault and battery with a dangerous weapon. The suspect had rings on her fingers that caused cuts on the victim’s face, according to police” and “they are trying to track down the person who recorded the video. They also want to speak to the students who were watching as the fight unfolded.”

This fight, which occurred in 2008, is even more shocking. It was described as a “brutal attack by six teenagers [from 14 to 18 years old] on a sixteen year old girl. an attack, officials said, the teens filmed just so they could post it on the internet.” First, “the girl was lured to a lakeland [Florida] home, there, in a part of the attack that is not on the video, two of the girls began yelling at the victim and another girl began beating her and slamming her head into a wall. the victim lost consciousness, but when she awoke, a total of six teenage girls began beating her…the victim was prevented from leaving the house.” On the video, “the girls can be heard encouraging each other, and even worrying that one attacker will damage a nearby piece of furniture,” when she yells out “don’t hit the shelf.” Two teen boys kept watch outside, and “the victim suffered a concussion as well as damage to her left eye and left ear and numerous bruises.” All of the teenagers were charged with battery and false imprisonment. A Half Million Bakers Fuck With One Oven

I have to wonder if our increasingly Huxley-like dystopian future practically guarantees that we’re eventually going to fossilize any remains of real “choice” out there so that the only things that remain are a sort of freeze dried, Folger’s crystals version of freedom.

I apologize for that sentence. Stuff like this can provoke me.

Jezebel.com (a site all peoples should be addicted to) reports the formation of a new reality show. You know, like this one:

Now what’s bizarre is that this is a reality show… where actors play written roles. That’s strange enough.

But here’s what’s perverse, and, if you will, imagine with me ol’ Regis shouting out, “Who Wants to Decide if This Woman Gets an Abortion!?!?!”

I won’t ramble on, because I want you to follow the link and read about it in detail. You’ll find pilots for the show there and everything.

So here’s a summary. In the show, called “Bump”, real women put up, for a vast internet audience, their stories and their pregnancies… for America to vote on the outcome. Deciding if the fetus is kept, given up for adoption after carrying to term, or aborted. After watching actors play the women. Room for commercials.

By my reckoning, this here is the 6th sign of the apocalypse.

You Don't Tell the Atlantic Ocean to Behave

A Ted.com talk from Eve Ensler .  This is the most important thing you’ll understand – almost ever.  Just slistenq.   Ensler releases her book, “I Am an Emotional Creature:  The Secret Life of Girls Around the World” tomorrow.

“I love being a girl.  I can feel what you’re feeling as your feeling inside the feeling before.  I am an emotional creature.  Things do not come to me as intellectual theories or hard-pressed ideas.  They pulse through my organs and legs and burn up my ears.  Oh, I know when your girlfriend is really pissed off, even though she appears to give you what you want.  I know when a storm is coming.  I can feel the invisible stirrings in the air… it’s a vibe I share.

Don’t tell me not to cry, to calm it down, not to be so extreme, to be reasonable.  I am an emotional creature. It’s how the earth got made, how the wind continues to pollinate.   You don’t tell the Atlantic Ocean to behave.  I am an emotional creature.  Why would you want to shut me down or turn me off?   I am your remaining memory.  I can take you back.  Nothing has been diluted.  Nothing’s leaked out.  I love, hear me, I love that I can feel the feelings inside you, even if they stop my life, even if they break my heart, even if they take me off track.  They make me responsible.
